Fajitas

INGREDIENTS 

For 8 fajitas (4 people)


      PREPARATION

      Wrap the tortillas in aluminum foil and heat them in an oven at 100°C.

      Dice the chicken.

      Sear these in a lightly oiled frying pan. When browned on all sides, add the sauce of your choice and cook gently, covered, stirring occasionally.

      Prepare a guacamole-type avocado purée: place the avocado flesh in a bowl and coarsely mash it with a fork. Add spices, salt, pepper, a squeeze of lemon, mix and set aside.

      Peel and finely chop the red onion.

      Wash the bell pepper, cut it in half and remove its seeds. Cut it into strips.

      Take the tortillas out of the oven and top them with mashed avocado, then chicken in sauce and finish with the raw vegetables. Add a little chopped fresh coriander and a squeeze of lime.

      Serve immediately!
