For the record, we concoct this recipe with organic Navel orange. We like it for its thick, rough skin and crunchy, sweet pulp. We use 100% of the orange by crushing it, which makes it possible to have a very jammy consistency with a lot of chewing. We add a little orange blossom to this sweet orange jam to enhance the subtle side of the aromas.
