Fig and Balsamic Vinegar Confit

The violet fig from Solliès is used in this condiment full of pieces, with the good taste of the fruit enhanced by the caramelized touch of balsamic vinegar. Excellent with foie gras, it also goes well with fresh goat cheese and can even be used in the composition of a dessert, with vanilla ice cream!
