Apricots with Wild Thyme Confit

A Southern Alliance! An apricot from Roussillon or Provence with wild organic thyme from our Hérault producer, there could not be a more local association. We like the tangy side of the apricot with the herbaceous hint of the thyme. The set perfectly enhances the triple-cream cheeses. So we leave our native South and we marry him to Le Chaource. And to travel even further, we wrap the cheese with pastry sheet confit and we make... spring rolls! Placed in the oven, they make a delicious aperitif or accompaniment to raw vegetables for an evening meal. It is eaten without hunger!

Ideal with a Brillat-Savarin or a Chaource. To be tested, the bricks stuffed with chaource and Confit d'Apricot Thyme in the oven...

La présence du thym est trop présente elle cache presque l'abricot.
Difficile d imaginer la manger au petit déjeuner.
Celle Framboise thym est meilleure mais le thym prédomine dommage

Le confit d'Abricots au Thym Sauvage n'est pas une confiture. Vous pouvez déguster ce confit avec du fromage notamment le Chaource ou le Brillat-Savarin.
