Pulled Pork Tacos with Latino Sauce and Marinade

Cooking time: 120 minutes

INGREDIENTS

For 4 people (or 2, to have leftovers!):

  • 1.2 kg pork loin
  • 2 tbsp. olive oil
  • 3 cloves of garlic
  • 10 cl cider vinegar
  • 15 cl of tomato pulp (or concentrated tomato juice)
  • juice of 4 limes
  • ½ tsp. coffee Espelette pepper
  • 4 tbsp. tablespoons L'Épicurien Latino Sauce & Marinade (adjust to taste)
  • 8 sprigs of cilantro
  • 100g cheddar cheese
  • 12 corn cakes special tacos
  • 2 tbsp. tablespoon fried onions
  • 1 red onion cut into cubes
  • 2 tomatoes cut in cubes
  • 1 tbsp. salt

PREPARATION

Cut the pork loin into cubes. Heat the oil in a pan and add the pieces of meat. Brown them on all sides.

Meanwhile, peel and chop the garlic, then add it to the pan. Deglaze with the vinegar, remove the cooking juices well by scraping the bottom of the pan. Then, add the tomato pulp, salt, lime juice, chilli and L'Épicurien Latino Sauce & Marinade

Cook over very low heat for 2 hours.

Watch the cooking closely and add a little water if necessary.

Start shredding the meat as it cooks. Meanwhile, grate the cheddar and keep it cool.

When the meat is cooked, shred it well and soak it in the sauce.

Fold the patties in half, garnish with guacamole and pulled pork. Sprinkle with cheddar, fried onions, red onions and tomatoes. Serve immediately.
